When I first became vegan (only a short time ago) I began seeing cashews in so many of the recipes I was finding online. It wouldn’t be too long before I discovered (almost) all of their magical capabilities. Here is a small collection of things I have made using this amazing super nut. (Many recipes adapted from Minimalist Baker, my holy grail for vegan and photography inspiration)

1. Parmesan cheese

A quick, simple, and delicious vegan alternative that you can make at home! Simply 4 ingredients and 1 machine and you have a satisfyingly cheesy crumble to top all of your favorites 🙂




4 tbs raw cashews

3-4 tbs nutritional yeast

1/4 tsp garlic powder

1/2 tsp salt


BLENDER: add all ingredients to blender and pulse until crumbly

Store in the fridge for up to a month (if it lasts that long!)

2. Garlic Sriracha Aioli

So quick and easy, it only requires waiting 1 hour to soak the cashews. First time this recipe worked like a charm and it has never failed me! Switch up seasonings to create different flavors and this recipe can be used endlessly!




3/4 cup cashews

5-6 cloves garlic

1/4 cup water

1 tbsp olive oil

1 tsp maple syrup

1 tbsp lime juice

1-2 tbsp Sriracha

salt and pepper

cumin, chili powder, paprika to taste

optional 1-2 tbsp nutritional yeast for deeper flavor


CASHEWS: soak 3/4 cup cashews in boiling water for an hour

BLEND: add all ingredients and blend until smooth sauce forms
