Mexican Street Corn Salad

Mexican street corn has been showing up on menus for quite a while, and it’s really worth the hype. The sweet corn is juicy and sweet under the spicy and tangy cashew aioli and a dusting of chili powder! This recipe can also be made using fresh grilled corn on the cob for some smokiness!




4-5 ears corn on the cob or 2 bags frozen sweet corn

1/2 white or red onion

1 red bell pepper

1 jalapeno

1/2 cup fresh basil, cilantro, mint

1/2 tsp cumin, chili powder, paprika

lime juice

salt and pepper

optional beans of choice


CORN: grill corn on the cob on grill or over stove-top flame or cook frozen corn per the directions on package

CHOP: onion, bell pepper, jalapeno, and fresh herbs

COMBINE: all ingredients in a large bowl

SEASON: add a generous amount of salt, pepper, cumin, chili powder, paprika, and lime juice. Adjust to taste

SERVE: with cashew garlic aioli
