Tortilla Soup

This recipe came from a night when I wanted dinner to be quick and yummy. I never imagined it turning out so freaking amazing. This wasn’t something planned and I didn’t take any photos because I didn’t know how it was going to turn out! But this is absolutely the best soup I have ever made so I had to write it down and share it with you guys!

Ingredients

medium onion

3-4 garlic cloves

orange bell pepper

zucchini

olive oil

salt and pepper

4 cups Nature’s Promise vegetable broth

1 container Jacks Salsa medium from Stop and Shop

1 1/2 tsp cumin

1/2 tsp chili powder

1 tbsp chipotle adobo sauce

2 ears yellow corn

1 can low sodium black beans

TOPPINGS:

avocado

red onion

green onions

cilantro

lime

Daiya shredded cheddar cheese

Tofutti vegan sour cream

 

How to

FIRST: chop onion, garlic, bell pepper, and zucchini and add to large pot with olive oil, salt, and pepper. cook 5-6 minutes.

CORN: peel corn and cook in microwave for 3 minutes, one at a time.

TOPPINGS: chop avocado, red onion, green onion, and cilantro. get the lime.

NEXT: add vegetable broth, salsa, chipotle, cumin, and chili powder to the pot. bring to a low boil.

LAST: add the corn and beans. lower to a simmer for 20-30 minutes.

Top with everything.
